Cured & dry aged nape of traditional outdoor reared Yorkshire pork with Yorkshire Gin botanicals, herbs & aromatics from our own Yorkshire Dales Salumeria. (We take the used botanicals from Yorkshire Gin production and use them in our own special cure.)
