Smoked Imperial Stout
Collab with Buxton Brewery, we used smoked and peated malt, an ingredient we had never used before. Our technique was to make two beers; one rich, strong and slightly sweet imperial stout, the other very similar but using plenty of smoked and peated malt. Once both beers had finished their fermentation we blended the two until we found the perfect balance of smoke character in the beer.
